Morning sunshine! I hope you all had wonderful weekends and are ready to head back into the week. My weekend was very relaxing which included delicious takeout, movies, baking, raw food experimentation and a birthday dinner/dessert. Pretty solid!
Today I bring you a breakfast recipe for oats. But not just any oats…an overnight oat parfait with a flavour combination that is to die for- banana, date and walnut. I took some banana soft serve, layered it with date-infused overnight oats and sprinkled in some chopped walnuts, which gave some great texture.
Some of you out there might be asking- overnight oats? Banana soft serve? These were ideas that were totally foreign to me a few years ago, but since have become pretty big staples in my diet, especially in the warmer months. Overnight oats are simply oats that you soak overnight in a liquid so the oats absorb the liquid and become soft without cooking. This process saves loads of the time in the morning and it can be enjoyed cold (my favourite) or can be heated. Banana soft serve is simply taking a frozen banana and blending it until it reaches a creamy, soft serve consistency.
This breakfast is packed with loads of nutrition to help start your day off right! Quick energy from the dates and the banana which is supported by a slower energy release from the oats and tons of omega-3s from the walnuts and chia seeds. It kept me full for hours too- loads of fiber packed in there!
I loved this breakfast as it is both comforting from the earthy flavours of dates, walnuts and cinnamon and still refreshingly cool from the banana soft serve. A great transition breakfast as we move from winter to spring. Plus it feels a little special – it’s like eating an ice cream sundae for breakfast!

Banana, Walnut and Date Oat Parfait (Vegan, Gluten-Free, Refined Sugar-Free)
- 1/3 cup rolled oats
- 1 cup almond milk
- 1 tbsp chia seeds- I highly recommend adding these. They add bulk to the oats and help create a more cooked consistency
- 1 chopped medjool date
- 1/2 tsp cinnamon
- stevia to taste (I used vanilla stevia. If you don’t have that, add a splash of vanilla extract and desired sweetener)
Banana Soft Serve:
- 1 frozen banana
- splash vanilla
- 1 tbsp almond milk + more if needed to help it blend
- chopped walnuts and dates, for layering
Combine the oat ingredients in a container, mix well and keep in the fridge overnight so the oats absorb the milk and the chia seeds gel.
In the morning, adjust the sweetness if needed. Then blend the frozen banana, 1 tbsp almond milk and splash vanilla in a blender or food processor until smooth. Add in almond milk 1 tbsp at a time to help it blend if needed.
Now you are ready to layer! Place a scoop of the oats in the serving dish, following by some soft serve and a sprinkling of walnuts. Continue until all the oats and soft serve are used and finish with a sprinkling of walnuts and dates on top. Make sure you take bites where you get alll the layers!
