wiaw # 12- summer foods are here!

Hello all! Firstly, thanks for bearing with me in the last post- I got a little scientific and technical without even noticing! I guess it’s the Kinesiology with an emphasis on exercises physiology background coming out ;) I do love my enzymes… Secondly, thanks to all of you for your well wishes! I am still feeling very tired and lethargic, but I am feeling much happier despite it all and I know it’s in large part because of all of you! I am trying my best to be active and be creative in the kitchen even though most of the time I don’t really want to, but I think it’s helping. This is something I think is applicable in all areas of life…

Fake it till you feel it

If you make a conscious effort to act happy, excited, calm, self-assured, etc., eventually you will actually begin to feel these things for real. It’s something I try and do when I feel anxious and self-conscious and it does wonders.

Now today is Wednesday and you all know what that means- WIAW! As always, thank you Jenn at Peas and Crayons for hosting. I think this might just be one of the first What I Ate Wednesdays in a while where I didn’t have something else to chat about, besides what I ate! This WIAW showcases some of the the things I’ve been eating over the last few days as opposed to just one day in a week. I’ve been eating a lot of good stuff, still doing lots of raw, but incorporating more cooked in as well. It’s hard not to since BARBEQUE SEASON IS HERE! Grilled veggies, how I missed you! Another theme that emerged recently is cold foods- the colder, the better! And lots and lots of it. It’s been really really warm here and often the only thing I want in the afternoon is a smooth, creamy and cold smoothie in a bowl or a crisp salad. Plus, cold foods just taste better when it's hot out wouldn’t you agree?

WIAW #12- Things I’ve been eating lately

a recent breakfast! green smoothie and some ezekiel bread toast with sunbutter. I don’t think I’ll be having the toast too much anymore. This was the first time I tried having wheat since before my cleanse and my stomach DID NOT like it. I guess since having a total clean out my system is good at telling me what upsets it. awesome!

another smoothie- this is the first green smoothie ever I got my mom to try, so I decided it needed to be documented

coconut juice- SO GOOD! it does have added sugar but was so refreshing and tasty, I didn’t care!

the raw version of my banana coconut cream pie oats! couldn’t bare cooking up oats so this raw buckwheat version saved me the trouble of turning on the stove.

a mexican inspired cold quinoa salad- quinoa, kidney beans, corn, tomatoes, yellow pepper, parsley, avocado, lime juice, nutritional yeast and hot sauce. something I threw together but was delicious!

best smoothie creation in a while- strawberry basil smoothie! so unique and fresh. recipe to come!

evidence of the first barbeque evening of the season- quinoa, red bean and walnut burgers and homemade ketchup with roasted potatoes and grilled veggies. love those little charred bits on the peppers

this is a salad I brought to work yesterday inspired by one Sarah made at This is What I Eat- arugula, avocado, hemp seeds, dulse flakes, nutritional yeast, sprouted and dehydrated buckwheat, and grape tomatoes with the same balsamic vinaigrette as above. really good combination of flavours. thanks for the idea Sarah!

new favourite candy- Chimes Ginger Chews in the peanut butter flavour. who knew this was such an epic flavour combination. pick some up if you see them they are sweet and have a kick!

So as you can see two major summer themes played a major role in my food this week- cold and grilled and I am loving it! Ok I lied, I do have something else to talk about :) A little feel good blog love! Thanks to Everyday Vegan Girl and Veggie What Now for nominating me for the Versatile Blogger Award! Both of these ladies are fantastic. Shelby has delicious and very healthful vegan recipes that are drool-worthy- check out her oatmeal posts! Veggie What Now has a fun and carefree approach to cooking that is just awesome and she recently tackled eating a food that scared her. Awesome girl! Thanks you both ladies!   1. Hooray for all of the fruits and vegetables! I almost forgot about all of these amazing fruits and vegetables until my co-op got stocked with them earlier this week. Oooh that cold quinoa salad with the bell peppers and delishisness… I think I’m going to have to try that!

    • It was one of my best “I’m just going to use up what’s in the fridge meals”, so fresh and the flavours just worked so well!

      I know, I always forget how good produce can be, then summer hits and I’m blown away once again. I love it!

  2. This post made me so hungry and it is almost 10pm! That green smoothie in a bowl looks lovely! I love the Mexican inspired salad too, it sounds like a perfect mix of yumminess! I’m so glad you tried (and enjoyed!) the salad and thanks for the shout out! The quinoa burger sounds perfect, any chance of getting that recipe? ;) I bet it would be cleanse approved!

    I looooooooooove summer foods too. I love grilled veggie salads with hummus instead of dressing. It is so delicious. And now I want that, hahah! SUmmer fruit is also the best, berries and watermelon, yum!

    • Hahah I know the feeling- reading blog posts makes me constantly hungry! I’d probably eat a lot less if I didn’t but where’s the fun in that? And yes I loved the salad- the dulse flakes were a brilliant addition so thank you :)

      I can for sure get that burger recipe up! It’s got a great texture and is really tasty, but neutral so you can load on your favourite toppings! I’ll do that soon for you!

      I looove hummus as a dressing- I like mixing hummus, nutritional yeast and a little water-YUM!

  3. Thanks for the little shout out girlie! Your eats, as always, look yum! If you like ginger, have you tried the Newman ginger “mints”? They have a very strong ginger taste, but so good, and ginger is very helpful for upset tummies!

    • Thanks! And welcome to the tradition :o). It’s definitely fun and eye-opening- I’ve noticed a lot of ruts and habits over the course of my posts. Plus it gets me to eat a little more creatively and try new things!

  4. Your food all looks so tempting! I love your idea of green smoothie in a bowl with berries on top. Did you post the recipe for it? Sorry if I missed it. I’m the same with wheat, doesn’t really agree with me but I still eat it occasionally. I hope you feel better soon, great attitude though.

    • Thanks! No I didn’t post a recipe, I usually just throw smoothies together in the morning and don’t really keep track! However, I do know that in that one was a frozen banana, 1 pineapple spear, 1/3 a cucumber, 2 large handfuls spinach, almond milk, chia seeds, hemp seed and spirulina :)

      I love bread so the wheat thing is difficult for me sometimes- but I am getting much better at gluten-free baking thankfully!

  5. Those Banan Cream Pie Oats …or buckwheat look amazing!!! I love arugula, this time of year i top just about anything and everything with farm fresh arugula – so good!

    • Oh I know right? I used the last of what I had today for lunch and now I’m sad- what will I do for dinner??? It’s terrible really ;)

      I think one of my favourite things about this time of year is all the seasonal produce- everything just tastes better :)

  6. I also love the peanut butter chimes! I take the regular ginger ones when I travel and on hikes, just in case someone gets minor upset stomach, or needs a little pick-me-up while on the trail.

  7. You’re totally right about attitude being half the battle. My dad always tells me to smile at myself in the mirror and it does work!
    I’m going to need to back up and look at the banana cream pie oats. Those sound delicious.
    jealous of your roasted veg, and it is funny how something hot like that would mean summer as much as smoothies do!

  8. i love all that arugula! i went to make an arugula salad this past sunday (with lemon dressing and red onions) and anyways, the store was 100% out. after making them search in the back and being too lazy to go to another store i made due with green leaf lettuce. so not the same.
