healthy vegan friday #3

HVFButtonFont5

Good day to all you wonderful (vegan) foodies! It’s that point in the week again and that means Healthy Vegan Fridays- another round of highlighting awesome vegan recipes and getting to salivate over the new submissions. I don’t know about all of you, but I’m excited!

For those of you who don’t know, Healthy Vegan Fridays is a new weekly blog hop hosted by myself, Shelby @ Everyday Vegan Girl and Carrie @ Carrie on Vegan. It is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods.  The recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

Most Popular Submissions

We got 57 submissions last week and the amazingness of the recipes just astounded me, so check them out if you haven’t already! This week’s top 3 submissions were…

Zucchini Brownies by Vicky @ Sweet & Healthy Living

At 60 calories per brownie, you could eat 4 and feel no guilt! Plus they look so fudgy and moist!

Chocolate Toasted Lentils by Living Learning Eating

I’m so intrigued by this recipe, what a great way to get some protein while getting a sweet fix!

Quinoa, Chickpea and Zucchini Ribbon Salad by Dianne @ Veggie Girl

So much flavour and good ingredients packed in here!

My Featured Submissions

Favourite Main Event: Cilantro Bean Cakes and Mango Salsa by Rhiannon @ Happy Little Feet

I love the mixing of sweet and savoury flavours so this main dish was calling to me.

Favourite Sensible Snack: Raw Zucchini Bread by Veronica @ Veggie V's Vegan Adventure

I love how simple the ingredients are here and how you can use leftover almond pulp (can never have too many almond pulp recipes)

Favourite Indulgence: Vegan Almond Chocolate Ice Cream by Shira @ in pursuit of more

Yes ANOTHER almond pulp recipe and oh my look how sinful it looks! Really short ingredient list too :)

Now it’s time for this weeks submissions. GET EXCITED.

My submission for this week:

  1. Hi Gabby,
I don’t see the list (or pics) of the HVF submissions for last week. The bottom of your post says “Linky Tools subscription expired. List not available.” I think it says the same on Carrie’s and Shelby’s sites…

  2. Wow, I never thought that a low-calorie, zucchini based brownie could ever look so decadent! Seems like I’ll have to add quite a few more recipes from this round up to my “must make” list… Just browsing through all of the photos is making me hungry!

  3. Oooh! That oatmeal raisin cookie smoothie looks so awesome! Yum!

I’m entering my Mango Peppercorn Glazed Tempeh Salad this week. Thanks so much for hosting! Have a great weekend, Gabby!

  4. I love these Healthy Vegan Friday posts! I look forward to them every week! Those brownies look amazing, I can see why they had the most clicks! This week’s choices look amazing too! • Yay Sarah me too! I’m so glad I’m not the only one ;) Can’t wait to see your submission, you always have delicious recipes up your sleeve.

I agree- oats add great flavour and texture, plus they keep you full for ages! I loved the colour of this one too- so bright and vibrant!

Have a great weekend too Sarah! Hope you’re feeling better and that you have time to rest :)

  5. Those courgette brownies look amazing. I can’t wait to try them. I love healthy sweet treats.
This week I’ve shared my spinach ice cream which may sound horrible but it’s actually gorgeous. You can’t taste the spinach and kids love it too. I have also shared my prize pineapple and parsley smoothie which is another strange taste but you really have to try it to believe how well this works.
