Hello my lovely, vibrant veggies! I’m so excited it’s Friday because that means it’s Healthy Vegan Friday time. Last week was another great success and I was really astounded by the recipes that were submitted. It really just goes to show you how amazing plant-based eating can be with a little creativity and inspiration.
For those of you who don’t know, Healthy Vegan Fridays is a new weekly blog hop hosted by myself, Shelby @ Everyday Vegan Girl and Carrie @ Carrie on Vegan. It is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. The recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

These are packed with whole-foods ingredients and just a little decadence from the chocolate chips. These remind me of cookies I used to make at camp when I was a kid :)

I actually made this bread back when she posted it (I don’t think I ever told you Ali as it was in my pre-blogging days!) and I loved it- so wholesome and such a great breakfast. So I am so thrilled you all love this recipe too!
How (and why) I got my family off of dairy from Emily at Triumph Wellness
This is a lovely story about how Emily transitioned into cutting dairy from her and her family’s diet. I went through a very similar progression in terms of getting off milk- you just have to open your eyes and all the pieces fall into place!

In keeping with my categories from the last couple weeks, these are my top picks. But believe me, it was a struggle to choose only 3! It would have been difficult to choose 12 with all the amazing recipes you guys submitted!
Favourite Main Event: Mango Peppercorn Glazed Tempeh Salad from Kristy @ Keepin' it Kind
There are so many amazing flavours in this salad and a great tutorial on steaming tempeh. I love tempeh so this one had me from the title!
Favourite Sensible Snack: Vegan, Gluten-Free Fig Newton Clones by Lauren @ Oatmeal with a Fork
As a kid, fig and raspberry newtons were one of my favourite treats. Dare I even say they surpassed chocolate chip cookies. I would love to get to enjoy these again, but all healthified, veganized and de-glutened :)
Favourite Indulgence: Berry Bliss Cheesecake by Heather @ Sweetly Raw
Does this choice even need any explanation? It looks so amazing and decadent and uses really easy to find ingredients! And it’s raw and vegan to boot. I with I lived near the Farmer’s Market Heather sells these at so I could buy myself a slice!

Yay for Healthy Vegan Friday! I’ve been so inspired by everyone’s creativity! Everything looks amazing. I have to agree with you, those fig bars sound amazing and the cheesecake is gorgeous! I’m so glad that you posted the Coconut Cream Pie Oats recipe too! My brother doesn’t have a blender (can you imagine?!) so I’ll be smoothieless for a week, but what better time to try these oats! Can’t wait!
