healthy vegan friday #4

Hello my lovely, vibrant veggies! I’m so excited it’s Friday because that means it’s Healthy Vegan Friday time. Last week was another great success and I was really astounded by the recipes that were submitted. It really just goes to show you how amazing plant-based eating can be with a little creativity and inspiration.

For those of you who don’t know, Healthy Vegan Fridays is a new weekly blog hop hosted by myself, Shelby @ Everyday Vegan Girl and Carrie @ Carrie on Vegan. It is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. The recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

Most Popular Submissions

We got 53 amazing submissions last week and out of those, these were your favourites!

Chocolate Banana Cookies from Sarina @ Earth Given

These are packed with whole-foods ingredients and just a little decadence from the chocolate chips. These remind me of cookies I used to make at camp when I was a kid :)

Quinoa Banana Bread from Ali @ Farmers Market Vegan

I actually made this bread back when she posted it (I don’t think I ever told you Ali as it was in my pre-blogging days!) and I loved it- so wholesome and such a great breakfast. So I am so thrilled you all love this recipe too!

plant milk

How (and why) I got my family off of dairy from Emily at Triumph Wellness

This is a lovely story about how Emily transitioned into cutting dairy from her and her family’s diet. I went through a very similar progression in terms of getting off milk- you just have to open your eyes and all the pieces fall into place!

My Featured Submissions

In keeping with my categories from the last couple weeks, these are my top picks. But believe me, it was a struggle to choose only 3! It would have been difficult to choose 12 with all the amazing recipes you guys submitted!

Favourite Main Event: Mango Peppercorn Glazed Tempeh Salad from Kristy @ Keepin' it Kind

There are so many amazing flavours in this salad and a great tutorial on steaming tempeh. I love tempeh so this one had me from the title!

Favourite Sensible Snack: Vegan, Gluten-Free Fig Newton Clones by Lauren @ Oatmeal with a Fork

As a kid, fig and raspberry newtons were one of my favourite treats. Dare I even say they surpassed chocolate chip cookies. I would love to get to enjoy these again, but all healthified, veganized and de-glutened :)

Favourite Indulgence: Berry Bliss Cheesecake by Heather @ Sweetly Raw

Does this choice even need any explanation? It looks so amazing and decadent and uses really easy to find ingredients! And it’s raw and vegan to boot. I with I lived near the Farmer’s Market Heather sells these at so I could buy myself a slice!

That concludes the little recap of last week, which means it’s time to dive right into Healthy Vegan Friday # 4!

Here’s my submission for this week:

Banana Coconut Cream Pie Oats and Why it’s Important to Soak Your Grains

This breakfast tastes decadent but is super healthy! This post also explains why it’s important to soak grains to make sure you are getting the most nutrition from them that you can!

So, if you have a healthy vegan recipe (or 2) to share, please add it to the list below! If not, feel free to browse the submissions and get inspired! You can also check out our Facebook page and Pinterest Board and feel free to tweet about it using the hashtag #VeganFridays.

  1. Yay for Healthy Vegan Friday! I’ve been so inspired by everyone’s creativity! Everything looks amazing. I have to agree with you, those fig bars sound amazing and the cheesecake is gorgeous! I’m so glad that you posted the Coconut Cream Pie Oats recipe too! My brother doesn’t have a blender (can you imagine?!) so I’ll be smoothieless for a week, but what better time to try these oats! Can’t wait!

I submitted my Carrot Cake Smoothie recipe this week! So decadent and delicious but without all of the guilt :) Gotta love that!

    • I’m so glad you are liking it! Oh perfect about the oats! Sucks about him not having a blender- I can’t even imagine! You must be really looking forward to going to stay with him- I think getting away from life for a while is just what you need!

Awesome that you submitted that recipe! It looks amazing. Anything that tastes like carrot cake is ok by me!  I currently made a carrot cake chia seed pudding that is delicious so I’ll have to try your version :)

Your banana cream pie oats look so decadent! Totally “pinning” it. :-p THis week I’m submitting my “Honey” Ginger Almond Date Cookies. THank you for hosting and have a great weekend, lady!

    • My pleasure Kristy :) I can’t wait to be eating frui again so I can make it!

Hehe I love how the word “pinning” has totally changed meaning in the last year or so. That salad of yours is totally getting pinned too :)

      Have a lovely weekend yourself!

  3. Thanks so much for including me here Gabby! I really appreciate it. Your oats look absolutely amazing! I tried your banana-tahini cups (I guess I’m kinda making my way through your recipes), and they were delicious! A really creative way of making over the sketch-free recipe (where have those girls been, anyway?). Happy (vegan) Friday!

  4. Hey Gabby! Wow that banana cream parfait looks good! I love that. Thanks for hosting! This week I shared my Eggplant Non-Parmesan and my Almond Chips with Warm Italian “Salsa!” They’re both Gluten/Grain Free, Specific Carb Diet Friendly, and have Vegan Options! I hope you have a terrific weekend!

  5. Thanks again, Gabby, for featuring me on Healthy Vegan Fridays! I’m thrilled to hear that you made and enjoyed the banana bread in the past–it’s quite a winner, if I do say so myself. ;)

Those fig newtons look FANTASTIC and are going straight on my list of recipes to try.

  6. Wow that Quinoa bread does look good. So healthy! I would never have thought you could make bread from quinoa.

This week I’ve shared my popular Top 10 Green Smoothie recipes and my Healthy Cherry & Coconut Hot Fudge Sundae with a Green Twist which if you know me well, you’ll know I have to put something green in literally everything!

    Thanks for hosting
