Happy Friday my plant-based friends!
Sorry for being a little absent this week! School got intense and I barely had time to sleep let alone blog. I’ve been studying and working a lot so things have been intense. I even had a couple cups of caffeinated coffee! *gasp*. For those of you who don’t know I gave up coffee a few months ago and hadn’t fallen off the wagon so this was pretty huge. It was just so necessary after this week!
Thankfully, things have quieted down for now so I’m really pumped to peruse all the awesome vegan recipes I know you guys are going to share!
For those of you who don’t know, Healthy Vegan Fridays is a new weekly blog hop hosted by myself, Shelby @ Everyday Vegan Girl and Carrie @ Carrie on Vegan. It is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. The recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

This is my Healthy Peppermint Mocha made with Cold-Pressed Coffee! I figured since I cheated and brought back coffee into my life (briefly) I would share my lower-acidity version of this delicious beverage!

wowza.. u have been busy!:) i remember the crazy november/december when i got 2 hours of sleep most days. well i did that to myself by choosing a bad combination of courses for the sem! i dont think i can live without atleast a good 6 hour sleep anymore:)
those single serve choco cakes and the ice cream looks fab. i think i can top the frosting with that ice cream and devour the whole thing!

Yikes, sounds like you’ve been so busy! I hope things are settling down even though it seems like the pace of your courses won’t allow things to really settle down! You are a smartie though, I know you’ll own your courses ;) Best of luck with all of the studying and it seems like you are at least enjoying the experience despite all of the work :)

I think it’s going to settle down a little because I’ve fixed up my work schedule a bit and I think I have a handle on how to approach the school work :) I’ll still be busy, but a little more balanced! Thanks for the vote of confidence too! It’s funny, they told us in school to start playing the role of a nutritionist and I feel like since I started doing that, my confidence has picked up. The power of positive thinking eh?
Cold brewing is amazing- my go-to method for those random days when I treat myself!

ah! i hope things calm down for you and you can find a happy balance between school and doing the things you love. having been through many years of school myself i know how hard this can be. but, something i learned the hard way is that balance (even in school) is important. keep me posted!
