healthy vegan friday #16

hello all!

friday once again and what better way to celebrate the end of another week than with healthy vegan friday?

for those of you who don’t know, healthy vegan fridays is a weekly blog hop hosted by myself, shelby @ everydayvegan girl and carrie @ carrie on vegan. it is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. the recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

last week’s submissions were awesome- loaded with healthy fall comfort food! it seems like we are all on the same page with warming soups, root vegetables and squash and apples galore!

most popular submissions

Low Carb Muffins

oat bran muffins by adrienne @ whole new mom

no flour used in these bad boys and just look how crumbly and good they look!

Condensed Milk Recipe

vegan sweetened condensed milk by adrienne @ whole new mom

adrienne sure was popular around here this week! from scratch condensed milk sounds amazing!

cheezy corn quinoa by ashley @ ashley’s green life

this would be so comforting on a chilly evening, or any evening really.

my top picks

favourite main event: soba salad with ponzu sauce by rubber cowgirl

such a gorgeous bowl!

favourite sensible snack: pumpkin macaroons by ashley @ almostveggirlie

ok i know these look like dessert, but there is so little added sugar in these, they could still be considered a snack right?

favourite indulgence: maple almond butter banana cookies by infectiously optimistic

such great ingredients and an amazing flavour combination- what’s not to love?

now it’s time for healthy vegan friday # 16!

my submission for the week:

creamy chickpea tomato sauce

since i’m doing a sugar-free challenge, i thought it was only fitting to post a sugar-free recipe. this is such a filling and satisfying dinner, there would be no need for something sweet after. well maybe just a little something- carob almond fudge perhaps? recipe coming soon!

so, if you have a healthy vegan recipe (or 2) to share, please add it to the list below! if not, feel free to browse the submissions and get inspired! you can also check out our pinterest board and feel free to tweet about it using the hashtag #VeganFridays. feel free to grab our button (code is on the sidebar) to help promote this even and show your vegan pride.

you don’t have to be vegan to submit, just needs to be a vegan recipe. so share that creativity of yours!

just so everyone knows, shelby is taking a little break from blogging for now, so it’s just me and carrie hosting! hope life quiets down for you soon shelby!

thanks and happy friday!

  1. Oooh yum everything looks amazing! Great choices as always Gabby and that cheesy corn quinoa dish sounds delicious!! I will definitely have to go through these entries before I go grocery shopping to get my fridge stocked again. I’m in major need of some delicious, fresh food and trying some new recipes sounds like a great way to get my energy back :)

Your sauce looks delicious! I’m hoping to contribute next week when I get myself back in the swing of things.

  2. Hi Gabby – I linked up my kitchen tips post and realized that two of the recipes in it have meat in them – sorry about that. Go ahead and delete it if need be :-).
