hello all!
friday once again and what better way to celebrate the end of another week than with healthy vegan friday?
for those of you who don’t know, healthy vegan fridays is a weekly blog hop hosted by myself, shelby @ everydayvegan girl and carrie @ carrie on vegan. it is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. the recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!
last week’s submissions were awesome- loaded with healthy fall comfort food! it seems like we are all on the same page with warming soups, root vegetables and squash and apples galore!

my submission for the week:
since i’m doing a sugar-free challenge, i thought it was only fitting to post a sugar-free recipe. this is such a filling and satisfying dinner, there would be no need for something sweet after. well maybe just a little something- carob almond fudge perhaps? recipe coming soon!

Oooh yum everything looks amazing! Great choices as always Gabby and that cheesy corn quinoa dish sounds delicious!! I will definitely have to go through these entries before I go grocery shopping to get my fridge stocked again. I’m in major need of some delicious, fresh food and trying some new recipes sounds like a great way to get my energy back :)
