i’m feeling very very festive all of the sudden. school’s over, today is my last shift at work and then it’s holidays :) suddenly i am blasting christmas music and watching christmas movies like it’s my job (wouldn’t that be the greatest job ever?). christmas baking has been going on like crazy too. oh man i truly love this time of year!
i’ll say it now, since i don’t want it to get lost in all the submission guidelines: to everyone who celebrates christmas: merry christmas and for everyone else, happy holidays! i hope you all get some time to relax, spend time with loved ones and enjoy some delicious food!
and in the spirit of the holidays, it seems only right to have a holiday-themed healthy vegan friday!

Wow Gabby, I’m so happy you liked the squash lasagna. It was creamy and would probably be just a good with a cashew based cheese but I didn’t have the time that week so….we had it with a Marinara sauce for dinner and my husband didn’t notice that there was no meat in it. Really great ingredients and it freezes well too.

Awesome! I feel way more into the holiday spirit wrt treats now.. I was contempating making some raw snickers but thank goodness I don't have the ingredients to make them… so I have been safe for the time being! :)
