healthy vegan friday #22

i’m feeling very very festive all of the sudden. school’s over, today is my last shift at work and then it’s holidays :) suddenly i am blasting christmas music and watching christmas movies like it’s my job (wouldn’t that be the greatest job ever?). christmas baking has been going on like crazy too. oh man i truly love this time of year!

i’ll say it now, since i don’t want it to get lost in all the submission guidelines: to everyone who celebrates christmas: merry christmas and for everyone else, happy holidays! i hope you all get some time to relax, spend time with loved ones and enjoy some delicious food!

and in the spirit of the holidays, it seems only right to have a holiday-themed healthy vegan friday!

for those of you who don’t know, healthy vegan fridays is a weekly blog hop hosted by myself, shelby @ everydayvegan girl and carrie @ carrie on vegan. it is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. the recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

  4. Wow Gabby, I’m so happy you liked the squash lasagna. It was creamy and would probably be just a good with a cashew based cheese but I didn’t have the time that week so….we had it with a Marinara sauce for dinner and my husband didn’t notice that there was no meat in it. Really great ingredients and it freezes well too.
    Thanks so much for mentioning it and I hope to hear back from anyone who tries it out. It’s different, but it a good way :)
    The sugar scrub I added today is yummy even if you can’t eat it and makes a super easy gift so I hope you don’t mind my not featuring a food item this week. Thanks again and Merry Christmas to you too!

    • Of  course! I have never made a lasagna with squash but since it combines 2 of my favourites- pasta and squash, how could I not like it?
