hey everyone! firstly i want to apologize for being a day late on this. the linky tools site was down so i wasn’t able to access the party and then by the time it was fixed, i had to go to work! because i want to get the party up, this will be a slightly shorter version of my wrap-up from last week.
i hope everyone is settling back into real life after the holidays! i’ve started back at work but school isn’t on again till monday so i’m trying to enjoy the last little bit of break. i’m also trying to get back into healthier eating again (and normal portion sizes). hopefully some of the recipes here on hvf will help with that!
for those of you who don’t know, healthy vegan fridays is a weekly blog hop hosted by myself, shelby @ everydayvegan girl and carrie @ carrie on vegan. it is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. the recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

split pea soup with rutabaga croutons
this is one of my favourite soups! soups are such a great food to have when you’re getting into healthy eating because you can pack in loads of nutrition and because there is lots of water in them, you feel fuller after eating less! this soup is hearty, warming and delicious.

once again great recipes there! i especially love the walnut falafel sandwich and the split pea soup. I actually just made a mung mean soup/stew with chunks of broccoli in it. i went a bit crazy on the Indian spices but they do me gooood :)
Oh I love me some Indian spices, they are just sooo warming! Love the idea of pairing them with broccoli :)
