healthy vegan friday #24

hey everyone! firstly i want to apologize for being a day late on this. the linky tools site was down so i wasn’t able to access the party and then by the time it was fixed, i had to go to work! because i want to get the party up, this will be a slightly shorter version of my wrap-up from last week.

i hope everyone is settling back into real life after the holidays! i’ve started back at work but school isn’t on again till monday so i’m trying to enjoy the last little bit of break. i’m also trying to get back into healthier eating again (and normal portion sizes). hopefully some of the recipes here on hvf will help with that!

for those of you who don’t know, healthy vegan fridays is a weekly blog hop hosted by myself, shelby @ everydayvegan girl and carrie @ carrie on vegan. it is a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. the recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet!

recap of last week:

most popular submissions

_MG_9317

garlicky and lemony black eyed pea and kale salad from janet @ the taste space

Crispy Gnocchi with Brussels Sprouts and Mushrooms >> Veggiegirl.com

crispy gnocchi with brussel sprouts from dianne @ veggie girl

my favourite from last week:

walnut bella “meatball” sub from heather @ sunday morning banana pancakes

these “meatballs” look so perfect and the flavours sound amazing!

now it’s time for healthy vegan friday # 24!

my submission for the week:

IMG_2471

split pea soup with rutabaga croutons

this is one of my favourite soups! soups are such a great food to have when you’re getting into healthy eating because you can pack in loads of nutrition and because there is lots of water in them, you feel fuller after eating less! this soup is hearty, warming and delicious.

so, if you have a healthy vegan recipe (or 2) to share, please add it to the list below! if not, feel free to browse the submissions and get inspired! you can also check out our pinterest board and feel free to tweet about it using the hashtag #VeganFridays. feel free to grab our button (code is on the sidebar) to help promote this even and show your vegan pride.

you don’t have to be vegan to submit, just needs to be a vegan recipe. so share that creativity of yours!

just so everyone knows, shelby is taking a little break from blogging for now, so it’s just me and carrie hosting! hope life quiets down for you soon shelby!

thanks and happy friday!

  1. Oooh yum, everything looks great! Your soup, holy yum! You always pick such weather/season appropriate meals :) Definitely want to try this!

Sorry I haven’t been participating lately, been kind of crazy here but I’m going to try and get a recipe in for next week :)

  2. Thanks for the mention Gabby! Those “meatballs” are my favorite, I was just thinking on the way to work this morning that I need to make them this week :) Add in some of that smoky split pea soup and I’d be in dinner making heaven! xo

  3. once again great recipes there! i especially love the walnut falafel sandwich and the split pea soup. I actually just made a mung mean soup/stew with chunks of broccoli in it. i went a bit crazy on the Indian spices but they do me gooood :)
