the final healthy vegan friday

this week’s healthy vegan friday is a particularly difficult one to write. contributors will (hopefully) have received an email regarding this week’s news but if you didn’t, i sincerely apologize.

you see, some things have been stewing underneath the surface of this blog party. while the 3 of us hosts have truly enjoyed every friday spent with you lovely people, we have decided not to continue Healthy Vegan Fridays. it was a decision made rather quickly, but not without a lot of thought put behind it.

myself, carrie and katherine are all feeling a little burnt out. the combination of life and blogging can get hectic and tiring at times (as i’m sure all bloggers can relate to) and we all just felt like we needed something taken off our plate.

thank you all contributors and readers, past and present. some of you have been with us the entire time and some of you had just discovered us. i truly appreciate all of your contributions to HVF, the delicious vegan recipes you created and the time you spent here. each week was a true inspiration- seeing so many people come together over delicious and compassionate food was heart warming and soul hugging in a way you cannot imagine!

thank you for sharing your recipes and posts with us and for making me look forward to every single friday. i hope it inspired you, introduced you to new blogs and brightened your week even a little. i will miss it, but it’s time to say goodbye.

there is no code to submit recipes this week, just a little recap of last week’s. all of the past HVF’s will remain on my blog so you can always look back for inspiration.

i hope you will all still join me here for recipes and other posts :) thanks for being so wonderful!

welcome to the last (sad face) healthy vegan friday.

please check out last week’s healthy vegan friday! in case you haven’t seen the post or all the awesome submissions, head on over to check it out. for those of you who don’t know, healthy vegan fridays is a weekly blog hop hosted by myself, carrie @ carrie on vegan and katherine @ green thickies. it has been a place to share your healthy vegan recipes that make use of whole ingredients and minimize the use of processed and refined foods. the recipes shared on this link up are intended to emphasis the beauty, creativity and benefits of a healthy, plant-based diet! and even though it is ending, i would like to share with you the most popular recipes and a few i’m choosing to highlight!

most popular submissions

raw gingerbread cookies from davida @ the healthy maven

while i never likes tradition gingerbread as much as some people seem to (too crunchy!), i love the idea of a softer, raw (and healthy!) version.

cardamom eggnog from marianne @ rag doll kitchen

everyone should get to enjoy this holiday beverage whether you’ve chosen to give up dairy, had to give up dairy or just want to consume a little less!

chocolate “frosting" oatmeal from egginon

i have never had a problem with having dessert for breakfast, especially when it’s this healthy!

my top picks

while i wanted to pick every single recipe this week, here are a few that stood out…

favourite drool-worth dessertpumpkin pie rice krispie bars from shannon @ yup it’s vegan

what a unique dish combining 2 of my favourites! creamy pumpkin pie and satisfyingly crunchy rice kris pie bars. amazing!

favourite warming winter dish: cheesy butternut kitchari from kelli @ kelli’s vegan kitchen

if this dish doesn’t warm you from the inside out, i don’t know what will. i love kitchari since it’s healing and easy to digest!

favourite delicious drink: thick and rich avocado hot chocolate from suzanne @ hello veggy

this is so creative! i never would have thought of it and now i am kicking myself for not.

and with that, Healthy Vegan Friday draws to a cloase, seeing your stunning faces each week will be missed but i know we will continue meeting for a long time to come. thanks for being here and for making HVF such a success :)

healthy vegan friday #70 (!!!)

the weekend at last :) this week has felt so long! i haven’t been feeling my best so was essentially dragging myself through everyday. feeling better though so hopefully the weekend gets a little better (even though i’ll be working the whole time!).

before i get into the (vegan) meat of this post, i would like to ask for your help! i participated in the virtual vegan potluck last weekend (check out my post and all the other ones here), and voting is currently taking place for the favourite dishes. if you could vote for my chocolate protein tonic recipe (under the "beverages" category) i would appreciate it :)

it’s been a while since I shared some of my instagram photos on here! i find instagram for me goes in phases- one week i post everyday, the next nothing at all. these are some of the highlights of my last couple weeks! and p.s. follow me @gabbyouimet :)

this week's theme: why i am so happy i moved to toronto.

13cb23c6498111e3a0d40eeb204a5406_8

this is one of my favourite things about living in toronto. you never know what you're going to happen upon. life size transformer making my childhood dreams come true? yes please.

00a079664eec11e3b39812f5057eb2b3_8

this photo was taken a few minutes from my apartment in my cozy little neighbourhood. i love how everywhere you go in toronto has a different feel. i live in old town but i'm just a stones throw away from the financial district. such contrast, i love it!

47f1c2563b7911e3aa0022000aa821ef_8

i moved here to study holistic nutrition and i have gotten to totally immerse myself in that world- i have met amazing people and get to help out with plant-based cooking classes that make me so wonderfully happy- it's incredible to see people becoming empowered to take charge of their own health.

e01289004bb711e3a1a312e0792a0fb3_8

while i could go on and on about how amazng the food scene here is, what i want to talk about here is the ability to meet up with fellow bloggers and become wonderful friends with them IN PERSON. toronto has allowed me to connect with so many wonderful ladies that i wouldn't have gotten to otherwise. (special shout out to hannah who shares my love of bad diner coffee, pancakes and adventures around chinatown <3)

1b6e9a72507f11e38deb0a27ea2a0b69_8

i rarely put pictures of myself up, but this was such a wonderful night. and it highlights another wonderful thing about moving here- new people, new friends and wonderful nights out where i completely forget what it is to worry about nutrition and being healthy. i just enjoy the moments and nurture the soul. because that is just as important sometimes. this was a going away party for one of my coworkers and it was at once an extremely happy and sad evening.

most popular submissions

mushroom quinoa casserole from davida @ the healthy maven

mushrooms and quinoa go so well together! they add a rich earthiness that i sometimes find quinoa to be lacking. nice pairing :)

rich vegan cheesecake with a pecan shortbread crust from janet @ the taste space

this looks so much like real cheesecake it’s a little disconcerting. but in the best way because who doesn’t love cheesecake??

carrot cake for two from lauren @ oatmeal with a fork

i love this grain-free, vegan dessert for 2! perfect for when a craving hits but you don’t want to risk eating an entire cake in one sitting.

my top picks

favourite thing to snack on: cardamom sesame crackers from marianne @ rag doll kitchen

i like the flavour combination here- i’m a sucker for sweet and savoury combos so i would definitely be trying these with hummus.

favourite warming winter dish: stuffed portobello mushrooms from dianne @ veggie girl

there's something about mushrooms that warm you form the inside out!

favourite special breakfast: light hazelnut and currant scones from micha @ blissful bites

i love the flavour of hazelnuts when tied into scones- and these are extra hazelnutty because they are made with hazelnut meal in place of some of the flour, not just chunks of hazelnut throughout!

now for healthy vegan friday #70!

my submission for the week:

red lentil and quinoa kitchari

not the most beautiful dish, but it is warming, hearty and easily digestible!

healthy vegan friday #68

I got rid of my Metropass this month. For those of you who don’t know- the Metropass is the card one uses to access all of the public transit in Toronto. I decided that by having one, I was missing out on key walking opportunities. I love walking everywhere and have so much fun discovering new little corners of the city.

This might seem like a tiny, inconsequential detail to all of you, but it instilled an important shift inside me. You see, I am happiest when I am spending time outside, when I am moving and when I am connecting with the people and places around me. By taking transit fairly often over the last year I felt like I had started going through the motions of my commutes- hours spent in a daze that I can never get back. By giving up this piece of plastic, I am now engaged again. My mind is whirling with excitement over both new discoveries and comforting constants in my daily walks. I feel a lightness I have been missing.

The reason I am sharing all of this with you- it’s the small things in life that are the big things. The tiny details and the moments are what really matter. The journey, not the destination. The smallest things can mean a world of difference to your happiness. If any of you has something like this that you think is holding you back, I urge you all to make a change. It might seem like it doesn’t matter, but I assure you it does. We all deserve to be fully living and enjoying each moment. Allow yourself to, you are worth it!
